Fruit-nut-rawnola

Who likes muesli of any form as much as I do? I personally like to eat it in soy yoghurt with a little fruit, as a topping on a porridge or in a smoothie bowl.

Here I have a great recipe for you, which is made in less than 15 minutes and which guarantees you the perfect start into the day. Maybe you are wondering what rawnola actually means? It is the raw form of the cereal/granola, which is not baked as usual, but air-dried. So it keeps all the good ingredients and is not destroyed by the heat.

Another advantage of this rawnola is that it doesn't even contain as much sugar as purchased muesli, where you can find up to 50% refined or cane sugar. I don't want to talk sugar bad with it per se, after all it is still a yummy ingredient. But I personally like to choose the healthier alternative in my kitchen. Here we only use 10g of date syrup (and a little bit of fructose because of the other dried fruits). The good thing about date syrup is that it has a lower glycemic index and therefore only gradually penetrates the bloodstream, so that our blood sugar level does not rise immensely within a very short amount of time, as it does when we consume refined sugar, and then fall again very quickly. This means a much lower burden on our body and still 100% delicious taste.

Once you have prepared this Rawnloa, it will keep in the fridge for several days. Of course you could also prepare the double amount of Rawnloa, so you enjoy it a bit longer.

I really like bought muesli, but often I don't like the list of ingredients. Why do we need up to 50% sugar in it? I prefer to make it my own. It's full of good ingredients that will keep you full for a long time and give your body a perfect start to the day. The recipe is not only quick prepared, it contains very little sugar and is still fruity sweet. The fine cinnamon note rounds it all off perfectly.

Duration 15 minutes
Ingredients for 3 portions
  • 10g flax seed
  • 2 tablespoons of hot water
  • 40g oat flakes
  • 20g dried fruits (here: 10g goji berries and 10g prunes)
  • 0,5 teaspoonfuls of cinnamon
  • 10g cocoa nibs
  • 20g nuts (hjier: 10g almonds, 10g cashews)
  • 5g shredded coconut
  • 10g date syrup¹
  • 5g puffed grain (here: amaranth)
Preparation
  1. pour 2 tablespoons of hot water over the flax seeds and leave to soak for 10 minutes
  2. put all ingredients into a blender and mix on a low setting until the preferred consistency is achieved (better not to use a high-performance blender or only on a low setting so that you don't get any porridge and the rawnola still has a firm bite)
  3. let the finished rawnola dry in the fresh air for a few hours or in the sun for about 30 minutes, then store in the refrigerator
Remarks
¹ Alternatively, rice syrup, maple syrup or agave syrup are also possible. Or you can puree dates beforehand.
The rawnola can be kept closed in the refrigerator for several days.
