Vegan Tsatsiki tastes at least as good as the original! But all ingredients are exclusively vegetable. Instead of Greek yoghurt we use soy yoghurt. This Tsatsiki tastes wonderfully garlicky and reminds of a visit in a restaurant in Greece at the coast at sunset... You can easily get this feeling at home. And it doesn't even take 10 minutes. However, the Tsatsiki only becomes really tasty if you let it steep for a night or at least a few hours. That's not absolutely necessary, but it makes the taste more intense and the ingredients can combine really well. It is also important that you press the liquid out of the cucumber or let it drip off so that the Tsatsiki does not become too liquid. You could also use a vegan quark alternative instead of soy yoghurt, then it will be even creamier.
