Tsatsiki (vegan)

Vegan Tsatsiki tastes at least as good as the original! But all ingredients are exclusively vegetable. Instead of Greek yoghurt we use soy yoghurt. This Tsatsiki tastes wonderfully garlicky and reminds of a visit in a restaurant in Greece at the coast at sunset... You can easily get this feeling at home.

Ingredients for 3 portions
  • 250g soy yoghurt (sugarfree at best)
  • 200g cucumber
  • 1 tablespoon of olive oil
  • 1 large or 2 small clove(s) of garlic
  • 1 squirt of lemon juice
  • optional: fresh parsley or fresh dill chopped
  • ground salt, pepper, cumin (cumin)
Preparation
  1. grate the cucumber and either wrap it in a cotton cloth and press out the water or put it in a sieve and let it drain a little
  2. put soy yoghurt in a bowl
  3. press or chop the garlic clove and add to the soy yoghurt
  4. add salt, pepper, lemon juice, herbs and drained cucumber
  5. stir and let it stand for a while, at best prepare it the day before and let it stand covered in the refrigerator
