Vegetable Paste

This vegetable paste is intended to make our everyday life easier, because it consists of a lot of boiled vegetables, which can be kept for several months and can always be used as needed for delicious vegetable broths or as a spice paste. And these are the ingredients:

Granted, it doesn't look very tasty, but it serves its purpose! Unlike conventional vegetable stock cubes, you know what's inside and you don't need any flavour enhancers. We only use the power of nature! You can use it for all sorts of things: as a classic vegetable stock, as a spice paste for any savoury dish (be careful, then you should either do without salt altogether or use only a little), and and and and... Whatever you feel like. You don't have to stick to the ingredient list 100% when preparing it. You can let off steam with your vegetables or use what you have at home.

When my mum bought a Thermomix for the first time, it was one of her first recipes she tried. She immediately provided the whole family and what can I say: Since then we only have these at home, because it is wonderful to prepare in stock. But don't worry: you don't necessarily need a food processor for that. A normal pot and a blender are also sufficient to achieve the desired result. You can of course also prepare twice the amount and freeze some of it, then you'll have something for longer. Or you can simply pass it on - like my mother. The recipients will be happy - after all, it's the little things from (mid) 20 on that make life worthwhile.

You know what always bothers me about bought vegetable stock cubes? All those unnecessary additives. Ever since my mom used her Thermomix, all we have is this homemade vegetable paste. But don't worry - you don't need Thermomix for that. Just cook all the ingredients, puree them and fill them up. You'll have your vegan vegetable paste in stock for months.

Duration 50 minutes
Ingredients for 1 jar
  • 200g celery
  • 250g carrots
  • 100g onions
  • 1 clove of garlic
  • 50g fresh mushrooms
  • 1 bay leaf (optional)
  • 6 stems mixed herbs (frozen or fresh)
  • 4 stems of parsley
  • 120g sea salt
  • 30g dry white wine
  • 1 tablespoon of olive oil
Preparation
  1. cut the vegetables into small cubes or chop them in a mixer and put them into a pot
  2. add salt, wine, olive oil and simmer for 40 minutes¹
  3. then puree the mixture and pour into previously boiled glasses
Remarks
¹ in Thermomix Varoma level 3 without measuring cup, place the cooking insert on the mixing bowl as a splash guard
You should definitely boil the jars beforehand so that the vegetable paste will keep for several months in the refrigerator. For 500ml vegetable stock I use 1 tablespoon vegetable paste.
