Summer Ice Cream Yoghurt Dessert (vegan)

In search of a fruity, very simple and extremely delicious dessert? Then I have just the right thing for you! A sugar-free and vegan Summer Ice Cream Yoghurt Dessert that will blow your guest's and yourself's mind away.

All you need here is some vegan yoghurt, frozen bananas and various frozen berries. Within 10 minutes you have created the perfect summer dessert. If you don't have frozen bananas, peel them, slice them and freeze them in a container for about 4-5 hours. In fact, I also think this dessert is great after any "big" meal, because it is really light. There is no cream or anything like that used. Therefore, this dessert is also low in calories.

The layers are also totally variable. I recommend that you work your way from light to dark so you don't have to wash the mixer out a lot (this is really important information for the lazy ones). The first layer of the dessert consists of strawberry-banana ice cream. The second is pure yoghurt. The third can be either banana-blueberries or banana-raspberry ice cream (the raspberry variety first makes more sense because blueberries are darker). Topped with some vegan biscuit or puffed cereal, your dessert is ready. Boom, 10 minutes have passed and you have the perfect treat.

Ingredients for 2 jars
Base:
  • 2 frozen bananas
  • 200g unsweetened vegan yoghurt (here: soy yoghurt)¹
  • 200g frozen strawberries
  • 200g frozen raspberries
  • 200g frozen blueberries
Toppings optional:
  • 3 vegan Oreo cookies²
  • 5g puffed cereals (here: puffed amaranth)
Preparation
  1. if you do not have frozen bananas: peel the banana, cut it into slices, put it in a box and freeze it for 4-5 hours
  2. mix frozen banana slices in a high performance blender to make Nicecream
  3. put ⅔ of the nicecream in a bowl on the side
  4. mix the ⅓ of the nicecream with the frozen strawberries to a smooth mixture, pour into two glasses
  5. put each 100g of vegan yoghurt on the strawberry-banana ice cream
  6. mix more ⅓ of the nicecream with the frozen raspberries to a smooth mixture, also divide between the two glasses
  7. mix the last third of the nicecream with the frozen blueberries to a smooth mixture, pour into the glasses
  8. optionally top with vegan biscuits (crushed before in a bag) and the puffed grain
Remarks
¹ Even vegan coconut yoghurt tastes delicious in this dessert!
² Oreo cookies are usually always vegan.
