For a long time I have been trying to find the perfect dough for a healthy, vegan and sugar-free banana bread! I tested several recipes and now I have the perfect version with a combination of vanilla and chocolate for you! Fast, easy and incredibly delicious. Great for breakfast, as a snack for in between or as a healthy cake alternative. This is definitely my new favourite recipe on this blog!

To give this banana bread the perfect healthy touch, I use wholemeal spelt flour. That keeps all the good ingredients inside! Furthermore, this banana bread can be made completely without sugar. Why "can"? Because coconut blossom sugar can be added if you prefer your dough a little sweeter. And of course, the sweetness of the bread also depends on how ripe your bananas are - the riper, the sweeter. Therefore I would recommend you to try the dough while mixing it to see if it is sweet enough to your taste.

And because I love chocolate, but I didn't want too much chocolate in this banana bread, I decided to make a variation similar to marble cake by mixing one half of the dough with cocoa and then using a fork to mix it spirally with the light-coloured dough. So you have a super nice marbling (is that how you say it?) and the dough is a perfect mixture between vanilla and chocolate. Ok, I have to stop raving, otherwise I slowly get hungry again.

By the way, I use a foldable silicone baking pan*. In my experience, this is the one that works best. Of course you could also use a metal baking pan, but you should grease it or cover it with baking paper before. But in my experience, what doesn't work so well in a metal baking pan because it's difficult to loosen the bread. And if I used baking paper, I did not like the form of the bread that much. So the foldable silicone baking pan was really the best decision in my kitchen! Since I bought it, I use it almost all the time.
