Quinoa Fruit Salad (vegan)

Do you like fruit salad as much as I do? Then I have the perfect variation for you! A mixture of quinoa, your favourite fruit and a delicious strawberry-lemon dressing. What are you waiting for? Go ahead. You have to try it, it's so good. :)

Duration 25 minutes
Ingredients for 4 portions
Base¹:
  • 85g dry quinoa
  • 2 apricots
  • 2 plums
  • 1 apple
  • 1 pear
  • 1 (gold) kiwi
  • 1 banana
  • 1 mango
  • ½ Pomegranate
  • 130g strawberries
  • 1 stem of mint
Dressing:
  • 150g unsweetened soy yoghurt
  • 20g agave syrup
  • juice of one lemon
  • 150g strawberries
Preparation
Fruit Salad:
  1. wash the quinoa and cook it according to the instructions on the packet (I did NOT add salt to the cooking water), drain and let it cool
  2. wash the fruit, peel if necessary and cut into small pieces
  3. put everything in a bowl
  4. tear off mint leaves and add to the bowl, then mix altogether
Dressing:
  1. squeeze lemon
  2. put soy yoghurt, lemon juice, agave syrup and strawberries in a mixer
  3. pour over the salad in portions
Remarks
¹ These ingredients are totally variable. I have only written down here which fruit I have used. You are welcome to simply use your favourite fruit!
