Finally autumn is back! Here I have the perfect combination for you. Pumpkin, berries and chocolate fit together incredibly well. And since we still need one main ingredient, we have rice pudding, haha. Enjoy this explosion of taste.
Duration 50 minutes
Ingredients for 2 medium portions or 1 big portion
Base:
- 125g puddign rice*
- 500g oat drink
- 40g agave syrup¹
- 1 pinch of salt
- 1 teaspoon Pumpkin-Spice*
- 125g pumpkin puree
Toppings optional:
- 80g (frozen) raspberries
- 60g (frozen) blackberries
- 20g vegan dark chocolate
- cocoa nibs
- some Pumpkin-Spice*
Preparation
- wash pudding rice well
- put oat drink, agave syrup, pumpkin spice, salt and rice pudding in a pot and stir well
- boil at low heat for 10-15 minutes and stir again and again so that nothing burns
- add pumpkin puree
- cook for another 10 minutes, always stirring
- remove from the hot stove and let it swell for another 15 minutes if necessary, until the rice pudding is as soft as you like it
- decorate with toppings & bon appétit!
Remarks
¹ If you like it a little sweeter, you should use a little more agave syrup.
