Fruity Vanilla Balls

You are looking for a healthy vegan snack for in between? Which is sugar-free and simply delicious? And tastes like a healthy chocolate? Then you've come to the right place! These fruity vanilla balls are very quickly made and super delicious, I promise.
Duration 15+15 minutes
Ingredients for 15 balls
- 90g dried unsulphured apricots
- 70g cashew nuts
- 150g almonds
- 1 teaspoon vanilla extract or pulp of a vanilla pod
- 10g lemon juice
- 1 pinch of salt
- shredded coconut¹
Preparation
- soak the apricots in hot water for at least 15 minutes
- drain the water from the apricots
- put all ingredients in a blender and mix until the desired consistency, if necessary add some water if the mixture is not sticky enough
- form into small balls and roll in coconut flakes
Remarks
¹ Alternatively, you can coat the balls with, for example, finely chopped nuts.
